Petit Pineapple Tart - Petits Fours

	Ingredient	Quantity
1.	Small Round Tart Shell	12
2.	Vanilla Pastry Cream	3 ounces
3.	Pineapple Wedges	12
4.	Maraschino Cherry or Candied	3 - cut into 4 pieces
4.	Apricot Glaze	2 ounces

Process	Instructions
1. Spread	Using a small spatula spread pastry cream into bottom of shell.
2. Prepare	Slice pineapple wedges in appropriate size pieces to fit your tart shell.
3. Place	Place two slices onto each tart shell. Garnish with bright red cherry piece
4. Glaze	Glaze with apricot glaze using a small pastry brush.
5. Store	Store chilled.
