Ganache - Base Formulas

	Ingredient	Quantity
1.	Ghirardelli^® Semi Sweet Choc Chips	12 ounces
2.	Milk - Fresh	6 ounces
3.	Unsalted Butter	4 ounces

Process	Instructions
1. Place	Place chocolate chips into a mixing bowl.
2. Melt	Melt butter then add milk and bring to a rolling boil.
3. Pour	Pour boiling milk over the chocolate chips.
4. Mix	Mix slowly for 3 to 5 minutes until smooth. Do not mix fast or incorporate air bubbles.
5. Pour	Pour through a strainer into a suitable storage container. Store under refrigeration.
Variations:	See Fabrication Ganache Ganache can be used cold, warm or hot. Reheat in the microwave for a few seconds at a time, or over a pan of boiling water. (Bain Marie)
