Using a 9" x 12" cake, prepare two cake pieces by slicing 4 inches wide by 12 inches long, using tranche board as a guide. Slice each into three layers, bottom of cake becomes top of
pastry. Assemble onto tranche board and freeze to ease in handling
of slices. |
Make the mousse filling by mixing the mint flavor and green coloring into the pastry cream, mix very smooth. (Hint: the pastry cream must be very green and very minty, it will be diluted with the whipping cream which will lighten its color and then diluted with the addition of the cake layers which will reduce the mint flavor) While the whipped cream is whipping in the chilled bowl, mix the boiling water and gelatin together until complete smooth. Stir into the pastry cream until completely smooth. Fold the whipped cream into the pastry cream until it is uniform in color and appearance. Put all the mousse into pastry bad fitted with a wide flat (icing) tip. |
Have the two tranche boards close along side each other on your work table. Remove the top two layers from both and brush bottom with
1/3 of the plain syrup. Fill both bottom layers with half of the Mint Mousse. Overlay
middle layer, brush with 1/3 the syrup, and fill this layer with the remaining Mint Mousse. Press on the top (smooth) layer and brush with the last of
syrup. Clean up the sides with a spatula |
Separate the two tranche boards and smooth the mint filling that is exposed. Apply a thin coating of melted ganache to hide
the crumbs on top and sides. Chill for 10-15 minutes until set. |
Apply top finish covering of pure melted ganache.
Bring edges down onto sides and smooth off. Cover sides with chocolate
sprinkles. (Ganache should be melted on a Bain Marie to flow without
leaving spatula marks) |
Measure using ruler and mark top every 1-1/2 inches
for placement of a rosette. With a small star tip and pastry bag of
firm Ganache apply rosette garnish at each mark. |
Pre-slice and serve directly from tranche board
or serve onto a dessert plate. Using your creativity can easily be decorated for St Patrick's Day or Christmas Holidays. |
